Tasting Notes

The roots of Pajaru estate are deeply embedded in the history and symbols of Puglia. The shepherd, known as the “Picuraru” in dialect, embodies that seasonal toil typical of the slow work required to produce a great wine. It is from the tenacity and perseverance that the shepherds have in tackling their work that we were inspired by the creation of the Primitivo “PICURARU”.

It is a majestic wine with a deep ruby red color, exuding intensity. Its captivating aromas of ripe red fruits transform into flavors of dark chocolate, leather, and pepper on the palate. It is a warm, persistent, and moderately tannic wine that gains even greater expression when aged for a couple of years.

The PICURARU pairs well with legume soup with bacon, pasta with bolognese sauce and aged cheese.
