The roots of the Tenuta del Pajaru estate are deeply embedded in the history and symbols of Puglia. A “Pajaru” is a rural drystone building used as a shelter by farmers and shepherds. Only a skilled artisan called a “Paritaru” possessed the wisdom and expertise required to build these huts. Even today, the “pajaru” is an emblem of knowledge and experience, which are the same expertise required to produce a great wine.
The Negroamaro “Paritaru” is the result of that popular wisdom which over the years has become art in winemaking and which results in a unique wine with an intense red colour with violet reflections. A full nose of black currant, blackberry and jam that we find then in the mouth accompanied by hints of black chocolate and a spicy finish. Excellent with aged cheeses, white and red meats.
